Pasta, Bean and Vegetable Salad Recipe

This delightful mild, (not spicy), vegetarian one dish meal is easy to prepare. The ingredients are probably already available in your kitchen or garden, and the preparation time is less than one half hour. I love this mix, and put it together quite often.

Here is how to prepare this vegetarian meal

Ingredients to serve 4 generously:

- I cup dry pasta elbows, small size, plain or colored; wheat or corn work well
- One half cup chopped celery
- One cup frozen peas
- One cup canned cooked garbanzo beans, drained and rinsed
- One half cup green olives stuffed with pimentos
- One eighth cup fresh parsley or cilantro
- Any other mild vegetable addition that appeals to you

Method to prepare:

In 2 quart saucepan add water till half full and bring to boil. Stir in dry pasta and cook, stirring occasionally, till just firm, about 10 minutes. Drain, soak in cold water till ready to mix with other ingredients.

In large serving bowl, such as in photo, mix together vegies and beans. Add one eighth cup sugar, one eighth cup apple cider vinegar and stir till sugar is dissolved, then stir in 2 tablespoons vegetable oil. I use peanut oil.

Next, add in the drained cold pasta and add parsley or cilantro, salt and pepper to taste and any other seasoning you prefer. I like fine chopped dill weed.

To serve, spoon this mild mixture onto 4 serving plates or pasta bowls. Keep leftovers, if any, in a covered dish in refrigerator for the next day.

Enjoy this easy to prepare and filling vegetarian meal!
