How to Make Peanut Marinara Sauce - Recipe and Photos

Ingredients for 4 people:

 

6 ounces unsalted peanuts

6 ounces sliced fresh mushrooms

4 inch length of zucchini sliced thinly

¼ red bell pepper chopped

1/2 teaspoon salt

Pepper to taste

1 Tablespoon dried oregano

1 teaspoon garlic powder

3 tablespoons olive oil

1 - 15 ounce box tomato chunks

1 - 15 ounce can tomato sauce

Use a cast iron saucepan. Finely chop peanuts and add zucchini, bell pepper, and mushrooms. Stir in garlic powder, oregano, pepper, and olive oil. Saute till veg are wilted.

Stir in tomato chunks and tomato sauce.

Simmer 15 minutes to soften peanuts and cook veg.

Spoon over cooked pasta – your choice of pasta shape.
